2lbs. ground turkey
11/2-2 cups seasoned bread crumbs (or plain)
1 onion chopped fine
1 bell pepper chopped fine
2 eggs beaten
1 tablespoon garlic minced
1 jar (16 oz.)salsa
Mix well put in baking dish and bake 350 for about an hr.
This wk. and next wk. is daily care taking for my Mother-n-law.DH is over there today, I stayed home to clean and do some cooking ahead. I do double batches and freeze .Sure helps on a busy day!
The sun is shining today:o) Tomorrow night suppose to get rain turning to snow.

The meatloaf looks and sounds yummy, Lib!
It's snowing again here, but it's a wet, slushy snow. We've got probably 3 inches or so on the ground, but it's not accumulating on the roads much right now. It's 32F so right on the freezing line. We're supposed to get up to 8 inches before it quits. We'll see.
I need to do some bulk cooking and freezing too. Hope you get a lot done.
