Mine is potato Salad . I make it like my Mom did. I don't use a recipe .
I cube up pots. cook until tender I let them get cold.
I chop up 1 onion, 1 bell pepper ,a few stalks of celery, a few boiled eggs, a few big spoonfuls of sweet relish.Add Mayo and mix.
When we go to a gathering I use 5lbs of pots. if its just use I use about 9 . I always make it a day before I use it to let all the flavors blend.WE always have it for a couple meals .
Been a busy wk. I put up more food (Here "put up food" can or freezing food)
We had 2 storms today alot of good needed rain!

Counting my Blessings
With the temps rising ,care taking, putting up food,everyday stress,etc.,sometimes life gets a bit overwhelming ! I'm trying to take time
to count my Blessings! It does help a Great deal! Gives me a chance to regroup!
We have so much to be so Thankful for!

Making Sweet Memories
Little shadow wants to cook each trip here. Most of the time she wants to make a cake.
I've eaten this cake before but never made it, it is super easy to make.
Coconut Pecan Pound Cake
1 box yellow cake mix 1 box instant vanilla pudding ( I used coconut pudding)
3/4c oil
1c.milk 3 eggs
1c chopped pecans 1c.coconut
Combine all ingredients and blend well.Pour into a well greased tubed pan bake 375 for 1 hr.
Glaze:
1c.powdered sugar 1Tbsp. milk 1tsp. vanilla
Mix well and pour over hot cake punching holes with meat fork. let cool in pan .
I also made glaze and poured over cake after removing from pan I should of made it a bit thicker .
Fruit salad
1 can peach pie filling 1 can fruit cocktail drained 1 can pineapple chunks drained
Mix together and chill
You can use any type fruit also pie filling Its quick and easy and good.
You can also put in a sm. container of frozen strawberries do not thaw.
It must have worn Little Shadow out she is napping lol Today is our caretaking day for Dh Mom ,she and little Shadow enjoy each other very much!

Living Green
Being green has always been a way of live for me .Long before it was popular. I don't do everything green, but as much as I can.I make most of my cleaning supplies, I do buy one now and then to find most doesn't work any better than what I can make. I try to use cloth bags as much as possible,cloth cleaning rags. I wash clothes in cold water. Hang alot to air dry.
I have alot of vintage bowls etc. I use daily with glass lids, so no need for plastic wrap or tin foil.I can and freeze as much of our food as possible.
We use this shower timer with an air glass in the shower. All sinks and shower heads has water savers, we use only compact light bulbs. I cook alot in a crock pot, on a hot plate, and use a toaster oven as much as possible.I use as much rain water as I can, I wash dishes in dish pans and use the water to water plants. I buy as much as possible 2nd hand .Recycle as much as possible .Our washer,dryer, freezer,stove,fridge is energy star products. We did replace these with new when we did our reno hoping it will be the last time we have to replace them.

When having to go in the car we make each trip count and plan it where we can do as much as possible each trip out.
I was taught waste not want not, If it aint broke don't fix it. I think alot of our Parents and Grandparents ways that we seemed to get away from through the years, we're finding was the way to go and going back to them.
I know alot of folks doesn't like to discuss death (doesn't bother me) yesterday our newspaper had a write up about a funeral home here going green. Natural ways to bury our Loved ones.
And how more and more folks are choosing to go that route. Also said more folks are bringing their Loves ones body home for viewing,I haven't seen that since 1970s.
I do alot more green living . I think we have to be very careful trying to do green living,I think there's companies out there after money and the products are not worth buying,I also think what works for one household doesn't not work for every household. We just have to find what works for us and go with it. And not do it just because its the latest fad and the cool thing to do.

Fun Outing
Friday we took Little Shadow to Pigeon Forge ,for a fun outing. We went to the Park at the Old Mill, for a picnic, then fed the ducks, pigeons, and birds.
I love this flowers! The Old Mill is in the background. Growing up my Grandparents lived very close to the Old Mill, back then it was safe to fish in Little Pigeon River, lots of meals were caught there ,by the water wheel.Each trip to The Old Mill sparks lots of Happy Memories for me.:o)

Then off to ride the kiddy rides, a neat little area for smaller kids. Little Shadow loves going to ride the rides, she calls it the Playground. We always enjoy our outing with her .
