Making Sweet Memories


Little shadow wants to cook each trip here. Most of the time she wants to make a cake.
I've eaten this cake before but never made it, it is super easy to make.
Coconut Pecan Pound Cake
1 box yellow cake mix 1 box instant vanilla pudding ( I used coconut pudding)
3/4c oil
1c.milk 3 eggs
1c chopped pecans 1c.coconut
Combine all ingredients and blend well.Pour into a well greased tubed pan bake 375 for 1 hr.
Glaze:
1c.powdered sugar 1Tbsp. milk 1tsp. vanilla
Mix well and pour over hot cake punching holes with meat fork. let cool in pan .
I also made glaze and poured over cake after removing from pan I should of made it a bit thicker .
Fruit salad
1 can peach pie filling 1 can fruit cocktail drained 1 can pineapple chunks drained
Mix together and chill
You can use any type fruit also pie filling Its quick and easy and good.
You can also put in a sm. container of frozen strawberries do not thaw.
It must have worn Little Shadow out she is napping lol Today is our caretaking day for Dh Mom ,she and little Shadow enjoy each other very much!

Your cake looks delicious...I just love a glazed pound cake and fruit salad...oh my...I could live on the stuff.

Little Shadow and your dh's Mom are very blessed to get to stay with you.

Hi Lib ~ How wonderful to be able share those times in the kitchen with Little Shadow , tell her she did a great job. The cake looks delish and I could go for some of that fruit right about now.

We made some x-rated memories yesterday (LOL). My oldest daughter bought her kids a slip-n-slide , so yesterday afternoon all the grands stripped off all their clothes and were slipping-n-sliding (LOL)out in my backyard. I didn't take pics and I won't be sharing it on my blog , but they had so much fun :~).

Little Shadow's cake looks so delish and I love it when you can fancy up a cake mix. Sounds like this is nice and moist and coconut is a favorite of mine...in fact I just found coconut popsicles and they are good. Have a nice weekend...hugs, Linda
