Happy Good Fri. and Dandelion Jelly

Yesterday "Little Shadow" and I picked Dandelion blooms , washed and poured 2 c. boiling water over them,and let them set overnight.

This a.m. we strained the blooms,added 1/4c. lemon juice, and 4 c. sugar.



Then we boiled it to a full rolling boil that cannot be stirred, added 3 oz. liquid Certo and boiled for 2 more mins.We put it in jars and sealed.



I like the amber color setting on the windowsill. Now for it to jell and have a tea party .:o) "L.S." went home last night, then called this a.m. to come back. I think she should just move in.Lol

I have never heard of dandelion jelly before! I copied your recipe and may just make a batch some day! We don't see many dandelions here as the landscapers spray them and kill them.

Sounded like a fun cooking day with your "Little Shadow." How sweet that you have someone to do things like this with!

I don;t get around much lately as I've been working on my guest bath...what a job it has been! I work in slow gear these days! I can't do what I could 20 years ago! LOL

Lib , That dandelion jelly looks wonderful. I haven't made dandelion jelly yet , guess I need to give it try.
I've been picking dandelions today , hope to make some dandelion wine , guess I'll be picking more for jelly.

we make dandelion syrup every year, but maybe I should try some jelly this year instead or perhaps make both

THe jars that sealed I did Not put in the fridge.
I use 2 cups of blossoms.
