Poke Salad

Look what I discovered.Poke is coming up. Want be too much longer until we can have a mess of poke salad. I don't like to smell it cooking lol When you cook it ,forsure its a day to open the windows. After its boiled and done, I fry it up in bacon grease and scramble eggs in it. So yummy with a hunk of cornbread and onion.
A town about an hrs. drive from here has a Polk Salad Fest. around here we look for any reason to celebrate and have fun.lol
Hope everyone has a great wk.end!

The only time I've heard about poke salad is in the song "Poke Salad Annie"! lol I guess it doesn't grow around here and it's not something you ever see in the stores. I must look it up and learn more about it. Have a wonderful weekend, dear Lib. xoxo

Hi Pea,
I remember Poke Salad Annie.lol
I've never seen it in stores here , mostly folks who lives in the country pick it and eat it. The Berries are poision, that amazes me you can eat the leaves and stalks but the berries will kill you if you eat them.
Have a great wk.end!

We had poke salad and eggs for supper tonight and I have enough for another mess for Sunday Dinner. It's a good foot high already here in places.

Have a great weekend, Lib. :o)

Love and hugs,

Diane

My late MIL cooked poke salad , my FIL always told her it would kill her (LOL) , we eat it anyway but the guys wouldn't touch it.

I may cook up a mess soon , it's starting to poke up here too. Your recipe sounds delish , maybe I'll try it since I've never cooked poke before.

We have many festivals around here too. There's a Red Bud Festival , Pumpkin Festival , Old Fashion Day and a Chicken Festival , to name a few.

~ Many Blessings ~
